2 eggs
1/3 cup buttermilk
1/2 cup vegetable oil
1 cup mashed bananas
1 cup granulated sugar
1/2 cup brown sugar
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups toffee bits
Preheat the oven to 325 degrees. Spray a 9x5" loaf pan with cooking spray and set aside. In a large bowl, whisk together the eggs, buttermilk, and oil until thoroughly combined. Add in the mashed bananas, both sugars, and the vanilla and mix well. In another bowl, sift together the flour, baking soda, and salt. Stir the flour mixture into the creamed mixture and mix just until combined.
Pour half of the batter into the prepared pan and sprinkle with 1 cup of the toffee bits. Pour the remaining batter over top and sprinkle with the remaining 1/2 cup toffee bits. Bake 325 degrees for one hour or until a toothpick inserted in the center comes out clean.
